Menu 1:

chilled leek and apple soup with crab and ricotta

housemade cavatelli, prawn, sun dried chili, crispy garlic

summer fruit sorbet



Menu 2:

organic lettuce and grilled stone fruit salad, burrata and serrano ham 

lamb shoulder, mint and purple basil pesto, roasted fingerlings and baby turnip

Basque cheesecake, carrot apricot compote, five spice chestnuts



Menu 3:

nicoise of local lettuces and tomato, poached tuna, olive vinaigrette, new potato and chive blossom

seared scallops with brown butter sweet corn puree, crisped prosciutto and micro basil

apricot galette, brown butter and sweet cream




Menu 4:

baby endive and pear salad with tarragon, dill, buttermilk and fennel croutons

braised beef short rib, spiced honey and carrot sauce, potato confit

cornmeal cake with chamomile caramel and apple
